Easy BBQ Pork Sandwiches
1 Pork Roast or Pork Tenderloin
1/2 Cup Water
Salt and Pepper
Cook in crock-pot for 8-10 hours until done. Cut up pork and toss with BBQ sauce.

Babyback Ribs
Rack of babyback ribs (cut in half)
Seasoning rub (your choice - optional)
BBQ Sauce (your choice or see my BBQ sauce recipe)
Rub spices on rinsed ribs if you choose to do so. Wrap ribs in foil. Bake at 325°
for 1 1/2 - 2 hours. Remove from foil pack and place on hot grill. Turn to low. Grill for 30 - 40 minutes.
They are ready when they start to fall off the bone or break apart. Brush BBQ sauce on both sides and remove from grill.
(Gauge 1 - 1 1/2 pounds per person.)

Chili Dog Roll-up
10 hotdogs
10 flour tortillas
Grated Cheese
Chili (homemade or canned)
Chopped Onion
I started with
Kathy Patterson’s chili roll-up recipe and added hotdogs for a great quick meal.
Water down chili. Place 1 hotdog in a tortilla, strain chili where you’re adding mostly beans
and meat and pout a spoonful or two on top of the hotdog. Add some cheese and
a little onion and roll the tortilla, placing seam side down in a casserole dish. Continue
until all 10 are rolled. Pour the juice from the chili on top. (It’s ok if it has some beans and meat in it.) Cover
with grated cheese. Place in the oven at 350º for 10-15 minutes until cheese
is melted. Serve.
Herbed Roasted
Pork Tenderloin and Potatoes
3-4 pound pork
tenderloin
1 teaspoon garlic
powder
1 teaspoon onion
powder
1 ½ teaspoons
dried thyme
Salt and pepper
to taste
Mix herbs and
spices. Rub on tenderloin. Place
in shallow roasting pan. Cover with aluminum foil. Bake at 325º for 1 hour.
6-7 potatoes
(peeled and quartered)
2 tablespoons
olive oil
2 teaspoons chives
½ teaspoon garlic
powder
Salt and pepper
to taste
Boil potatoes
for 10 minutes. Drain and let cool. Add
olive oil, herbs and spices. Stir until coated evenly.
Place potatoes
around the tenderloin and bake an additional hour. Slice tenderloin and serve.
