Beef Stroganoff
2 lbs. Sirloin Tip (thin sliced)
1 can Mushrooms (sliced)
1 cup Onion (minced)
1/4 cup Butter
2 cloves Garlic (crushed)
1/2 - 1 cup Sour Cream
1 can Cream of Mushroom Soup
2 dashes Hot Sauce
1 dash Pepper
1 teaspoon Worcestershire Sauce
1/3 cup Water
Sauté mushrooms and onions in 1-2 teaspoons butter. Melt the 1/4 cup butter and brown and brown meat. Add
spices, sautéed mushrooms and onions, soup, sour cream, and water. Stir blending thoroughly. Cover. Stir
occasionally. Cook on low temperature for 50-60 minutes. Serve over noodles.
Cubed Steak and Gravy
1 cup Sour Cream
1 can Cream of Mushroom Soup
6 pieces Cubed Steak
Any seasoning you like (salt and pepper, Greek, Nature’s, etc.)
Place cubed steak in deep pan. Sprinkle with seasoning. Mix sour cream and soup together and pour over steak. Bake
covered for 1 hour at 350°. It will be so tender; you can cut it with a fork!
Johnny Peppers
2 bell peppers
1/2 cup rice
1 pound ground chuck
1 onion (chopped)
2 cloves garlic (minced)
1/4 teaspoon Italian seasoning
1/8 teaspoon Chili powder
1 can Rotel chopped tomatoes with green chilies (drained)
1 small can tomato sauce
1 1/2 cup Colby Jack cheese (grated)
Clean and half bell peppers; place in boiling water until tender.
Cook rice in boiling water. Brown ground chuck with onion and garlic. Add remaining ingredients except for
1/2 cup of cheese. Stir in cooked rice. Drain bell peppers and place in casserole dish. Spoon in beef/rice
mixture. Top with remaining cheese. Place in oven at 250F for 5-10 minutes, until cheese is melted.
Sassy Hamburger Steak
3 Tablespoons Butter or Margarine
1 Tablespoon Worcestershire Sauce
Juice From 1 Lemon
1 Onion, sliced
Mushrooms, sliced – fresh or canned
1 ½ lbs. Ground Beef
¼ Teaspoon Black Pepper
Saute vegetables in butter. Add
lemon juice and Worcestershire sauce. Cook over medium heat until tender. Remove from heat. Mix meat and pepper. Shape into patties. Cook in skillet until
brown. Add vegetable mixture, heat until evenly warm.

Meat Loaf
2 lbs. ground
chuck
1 egg
1/4 cup bread
crumbs
1 medium onion,
chopped
1/2 bell pepper,
chopped
1 1/2 stalks
celery, finely chopped (optional)
1 clove garlic,
minced
Salt and pepper
to taste
1 teaspoon sage
2 tablespoons
horseradish
1/2 cup grated
cheese
1 cup barbecue
sauce (I use my bbq sauce recipe)
1/2 teaspoon
dry ground mustard
Mix all ingredients
except for 1/2 of the barbecue sauce. Put in loaf pan. Bake at 350 for 30 minutes. Pour remaining barbecue
sauce and bake for an additional 15 minutes.
Homemade Sloppy Joes
2 teaspoons cornstarch
1/2 teaspoon celery seed
1/2 teaspoon chili powder
1/2 teaspoon dry mustard
3/4 teaspoon salt
1 teaspoon dried minced onion
1 teaspoon garlic granules
2 teaspoons dried green pepper flakes (I found these at a kitchen outlet for $1.25 a bottle)
2 pounds ground beef
1 large can tomato sauce or crushed tomatoes
1+ cup water
Mix all ingredients and simmer for about 10 minutes. Serve on toasted buns with cheddar cheese, onion slices,
and dill pickles.
