Spinach-Strawberry Salad with Special Dressing
Cream of Broccoli Soup
1 small onion, chopped
1 stick butter
2 beef bouillon cubes
2 cups milk
4 slices Swiss cheese
10 oz. Frozen chopped broccoli
Salt and Pepper to taste
2 heaping teaspoons cornstarch
Sauté onion in butter. Blend broccoli in blender with
milk. Mix cornstarch with milk mixture.
Combine all ingredients in pot. Heat until broccoli is tender.
French Onion Soup
4 onions (chopped)
1 T olive oil
2 T butter
1 qt. beef stock
Cayenne pepper (couple dashes)
Grated Swiss Cheese
Sauté onions in butter and oil until soft and translucent. Add cayenne and beef stock. Bring to boil. Serve with lots of cheese.
Joe's Chicken Salad
5-6 chicken breasts (with bone is better)
1 Tablespoon Morton's Nature's Seasoning
1/2 teaspoon garlic salt
1 small colored bell pepper (chopped)
1-2 celery ribs (chopped)
Mayonnaise (enough to stir)
Boil the chicken with the seasonings until tender. (Cooking in the crock
pot is great.) Pull the chicken off the bone and chop into chunks. Mix with the bell pepper, celery, and mayonnaise.
Add additional seasonings if desired. This is wonderful as a sandwich, served with crackers, or in a pineapple half.
Potato Salad
10 Medium Potatoes, Peeled and Chunked
4 Bouillion Cubes
1 Rib Celery (chopped)
1 Small Onion (chopped)
2 Heaping Tablespoons Sweet Pickle Relish
1 Teaspoon Prepared Horseradish
3 Tablespoons Prepared Mustard
1 Cup Mayonnaise
Put chunked potatoes in boiler. Fill with enough water to cover and add bouillion. Cook over medium heat
until fork tender. Mix with remaining ingredients in bowl. May serve warm or chilled. You can garnish with
sliced boiled eggs, paprika, or parsley.
Pork and Bean Salad
Pork and Beans
Bell Pepper (chopped)
Onion (chopped)
Mayonnaise
Prepared Mustard
Salt and Pepper (to taste)
Drain pork and beans. Combine beans, bell pepper, and onion.
Add enough mayonnaise and mustard to stir. Add salt and pepper. Chill. Serve with hamburgers and hotdogs.
Sounds odd, but is really good.
Spinach-Strawberry Salad
1 Bunch Fresh Spinach
1 sm. pkg. sliced almonds
1 pt. Fresh Strawberries
Wash spinach and break off stems. Wash and slice strawberries. Toast sliced
almonds on 325 for about 10 minutes. Combine ingredients. Serve with the special dressing below.
Dressing for Spinach-Strawberry Salad
˝ c. Sugar
1/3 c. Vinegar
˝ c. Oil
3-4 T. Water
1 t. Worcestershire Sauce
1+ T. Dry Minced Onion
1 t. Celery Seeds
Mix dressing ingredients in small pan. Heat until
sugar dissolves. Cool. Shake well. Pour over salad when ready to serve.
